[K12OSN] Too Many Choices

Although the K12LTSP desktop has a wealth of choices and applications, 
there are too many for our sixth grade class. Since my knowledge of Linux 
is limited (but growing), it is too easy for students to activate 
applications that they (and I) are unfamiliar with.

All we really need at this point is Open Office and a few games. We can add 
more applications back later as our skill level grows. I don't want their 
choices to get ahead of their training.

How can I limit the users choices without having to access each users desktop.

How can I customize the desktop and menu choices in one place and have it 
propagate to all the users?

By the way, after seeing our classroom network at Parents Night, one of the 
parents offered to donate two more computers to our class!
