I am in a similar position. With only experience of Debian and
investigating possibilities to offer LTSP to schools around where I
live.

If you are comfortable with Debian you might want to use it with LTSP
debs (or tarballs). On the other hand, K12 does seem to offer some
handy things that is not included in LTSP (ease of installation is
one, but probably not the most important, if you are used to install
debian). In order to get them, you will have to learn to administer a
Red Hat based system.
