Well that's just what I was looking for. I decided to take a box we've
got here in the office, put a couple of ide drives in it, and make it a
backup server. I think this is one of the cheapest ways to do it while
still having a decent backup.

Boxes are cheap, and so are IDE hard drives.  If you need to backup a 
240GB of storage, I'd say just setup a backup server with two 120GB IDE
drives.  Cost = $300 or less for a generic "box" + $160 for each drive =
about $600 -- not bad compared to the enterprise solution.

You can use rsync to do some pretty nice automatic network backups.
Although there are many possible setups, here's a HOWTO for a really
nice "snapshot" style backup with rsync:
