That should work fine.  You may need to update your MX record to point at the
correct IP address. Find out if whomever is doing your DNS for you can do
that for you.  if you are keeping your own DNS records, then you can update 
them directly.

If you installed sendmail when you built the system it should be very easy
to finish configuring it, otherwise I have heard that other MTA's 
( Mail Transfer Agent ) can be easier to setup and maintain. I have always
used sendmail so I can't give you any suggestions there.
